Southern greens Island style and Candied yams with marshmellows:
The southern greens, island style is a mix of
collard greens and kale reduced over a tasty
mix of seasoned sauteed spiced sausages.
Our candied yams are another crowd pleaser,
drenched as they are in brown sugar and a little
condensed milk and topped with mushy marsh-
Our cornbread (pictured at left) is the traditional
home made cornbread, with a hint of coconut
and a pinch of brown sugar to give it that extra
rich golden color and a nice moist texture.
The pepper shrimp, as the name suggests, is
not for the timid, since it is is seasoned with
hot peppers (seeds removed, thank God). We
also add bits of mild, red, yellow and green
bell peppers for visual impact and additional spunk. We offer a mild version upon request.
Our plantain chips (pictured at left), are made from plantains that are purchased green, and then allowed to ripen at a gradual pace in brown paper coverings in la light-free area, until they arrive at the perfect stage of ripeness. They are then peeled and fried in a thin layer of light vegetable oil then laid to rest on paper towels and finally sprinkled with a light dose of confectioner's sugar. Melt-in-your-mouth delicious!
Hot buttered rolls:
Our hot buttered rolls are fresh and tasty,
with a down home taste.
Baked three cheese macaroni pie:
We use three different types of pasta and three
different cheeses in our moist sumptious baked macaroni pies, which are finished with a topping
of parmesan shavings and parsley.
The codfish fritters proclaim:BEWARE, as there are tiny bits of scotch bonnet peppers in them, that is why we also offer a mild version upon request.
The codfish (after the salt has been extracted),
is minced and mixed with seasonings and potato
and enough liquid to form a nice batter, then portioned off and cooked in virgin olive oil.
The ginger beer
is made from ginger that is
grated and left to sit in boiling water for at
least 72 hours in order to ferment, after which it is sweetened with a hint of molasses and brown sugar, Slices of limes and lemons are added for that extra zing.

We offer several vegetarian dishes, among the
most popular are our sauteed tofu, (seasoned with no-salt soy sauce and red onions), our lentils, brown rice and organic spinach dishes.
